100% Saperavi, fermented in stainless steel tanks, with a remaining 7% in Quervi anphorae as whole bunch. After the 6 weeks in stainless steel, the wine get divided in a mix of stainless steel and barrels of different sizes and uses to undergo malolactic fermentation. After bottling, the wine remains for further 12 months in bottle before being released.
This wine is dark purple in colour. The nose opens with a powerfulnsavoury-spicy bouquet of blackberries, herbs, flowers and blacknpepper. The palate has a creamy, juicy texture, ripe tannins andnblack fruit flavours.
Perfect with aubergine and mozzarella bake, chevre cheese, and red meats.
